2001, 2005, or both?
Which ruleset is used/best and why? I like 2005 with the exception of the weapons. Can I just take what I like from each rule set and combine them?

You can do whatever you want. I've found that most people like the simplicity of 2005, but like to take some add-ons from 2001. Custom weapons are pretty commonplace.
Often, literally, a pillow fight but may include similar situations like volleyball, particularly when wardrobe is skimpy and the action is bouncy.

I like 2005 better because it's more fun and less 'spergy. There's a few things that got left out, but I've made my own house rules to cover that.

Plastik Armory: a bunch of weapons and abilities compatible with the 2010 rules.

To quote the Overlord himself "You should be able to ignore 99% of the rules 99% of the time."
So yeah, you're pretty much required to make up your own rules and stats and stuff, however the rule books and a few of the fan-made rules in the bonus section are good places to take inspiration from when making up your house rules.

I basically just use the QuickWars rules so the pacing of the game is faster and more enjoyable for the less hardcore rule-geeks I play against. We resolve questions with the 2005 rules and disputes are always solved by "what I say goes".
We used to play our own Brik wargame before we even discovered BrikWars, which is why I think we're so light on the rules now.
What we would play back then was more a game of creativity than strategy. Each player would start with lots of minifigs, and each one would get a heroic feat (guaranteed success) each turn. Very simple, no stats or die rolls. We would basically just play to see who the last man standing would be, and that particular minifig would be the winner of the day.

I said "no" to drugs, but they just wouldn't listen...
